DreamCloud’s Brunch In Bed Green Smoothie Pancake Recipe
A sneaky and yummy way to get your greens in while also having a sweet, delicious, and festive breakfast after a long night’s sleep. These nutrient-packed pancakes come with 2 cups of spinach in each batch, and the best thing is— you can’t even taste the greens! We also think it’s because of the warm, sweet blueberry compote to pour on top.

- 2 large eggs
- 1 cup baby spinach
- 1/4 cup almond milk, coconut milk or cashew milk
- 1/2 cup almond flour
- 1/3 oat flour
- 1/4 cup coconut flour
- 1 tbsp honey, or maple syrup
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1/4 tsp salt
Blend all ingredients and add more milk as needed to make batter. Use butter, ghee or coconut oil, to coat the skillet. This recipe makes 4-5 small pancakes.
The finishing and most important step (because it takes your pancakes from 100-150% in deliciousness) is the blueberry compote. It’s simple, adds the right bit of sweetness, and makes for the perfect photo op.
BLUEBERRY COMPOTE INGREDIENTS
- 1/3 cup frozen or fresh blueberries
- 1 tsp honey, maple, or coconut sugar
- 1 tbsp water
Put ingredients in pot over medium heat, stir occasionally until the substance is caramelized. Pour over pancakes. Enjoy.
